The best thing about these fun and colorful fortune cookies is that you’re the one writing the fortunes! You can make them say anything you’d like (so a lot of mine mysteriously had fortunes about great health and finances). These are great for the month of January so that you can fill them with great fortunes for the whole year. Kids will love them, especially if you can think of some unique personalized notes!
What You’ll Need:
›› 5 large egg whites
›› 1 cup sugar
›› 1 tsp vanilla extract
›› 1/2 tsp almond extract
›› 4 tbsp water
›› 1 cup all-purpose flour
›› Food coloring of your choice
›› Optional – pinch of cinnamon
Instructions:
›› Write out fortunes and cut them into strips (approximately 2.5″ by 1/4″)
›› Preheat oven to 375. In a medium bowl, whisk together all the dry ingredients. In a separate bowl, whisk together the egg whites, water, and extracts until the mixture turns fluffy (small peaks form). Then mix all of the dry and wet ingredients together.
›› Separate your batter into equal individual bowls. The number of bowls is determined by how many colors of cookies you’re planning on making. I used six different colors so I equally separated my batter into six small bowls. Once you have the batter separated, add a couple of drops of food coloring (in the color of your choice) to each. Stir until incorporated.
›› To make sure the cookies don’t stick, I recommend using a silicone mat on a flat baking sheet (my baking sheet had tall sides so I actually flipped it upside down and used the mat on the bottom). You’ll need to fold them fast so I recommend only baking 2-4 cookies at a time (start out small until you get the hang of it). Pour about a tablespoon of batter on the mat and use the bottom of a spoon to spread the batter out into 3-inch circles. Once you have a few poured out, place in the oven for around 8 minutes — watch for golden edges.
(IMPORTANT NOTE: Folding the cookies must be done very quickly or they will harden and crack. This will be too hot for little hands, and if you worry they’ll still be too hot for an adult to fold, try wearing a thin cotton glove when folding to ensure it gets done as quickly as possible!)
›› Take the cookies out of the oven and immediately loosen them from the pan using a flat metal spatula. Flip the cookie over and place a fortune in the middle, before folding the cookie in half over the fortune (like a taco). Pick up the folded cookie and bend it over the rim of a cup or coffee mug, with the seam facing upwards, then place it in a muffin tin cavity to hold it’s shape while it cools.
›› Repeat with each cookie, baking them in batches of no more than five so you can get them folded before they harden!
