With Mother’s Day approaching, it’s good to have a plethora of breakfast ideas for the woman that deserves breakfast-in-bed. If that woman is you, prepare to do some heavy hinting because this healthy recipe is absolutely delicious! Call it a granola tart, a breakfast pizza, or a yogurt pie. Whatever you want to call it, this tasty recipe can be adjusted to fit any diet. If you’re vegan or can’t have dairy, just replace honey with pure maple syrup and use a dairy-free yogurt. If you’re watching your carbs, replace the oats with more nuts and seeds and try a stevia nectar or another sticky sweetener that is lower on the Glycemic index.
The toppings and crust can both be matched to your preference. Any type of fruit or topping can be used with your yogurt, and you can switch out any type of nut or seed in the crust, as long as you keep the same amounts. I used chia seeds, hemp hearts, pecans, and almonds in mine.
This recipe can be made with small hands, as long as they get help from a guardian when it comes to the food processor and oven! That makes this a perfect breakfast treat for mom (that the kids are sure to enjoy as well).
WHAT YOU NEED:
CRUST:
›› 1 1/2 cups rolled oats
›› 1/2 cup shredded coconut
›› 1/2 cup nuts
›› 1/2 cup seeds (use another 1/2 cup nuts if preferred)
›› 4 tbsp honey (or pure maple syrup)
›› 1/4 cup coconut oil, melted
›› 1 tsp vanilla extract
›› pinch of salt
TOPPINGS:
›› 1 1/2 cups Greek yogurt, plain
›› 1 tbsp honey
›› 1/2 tsp vanilla extract
›› Any extra add-ons (fruit, chocolate, etc)
Directions:
›› Preheat oven to 350°
›› Add oats, coconut, nuts, and seeds to a food processor, and pulse until crumbled.
›› Add in honey, coconut oil, vanilla extract, and salt, and pulse again until combined.
›› Press your crust mixture into tart tins (I used mini-tart tins, but you can also just use one large one. If you don’t have the type of tins that have removable bottoms, make sure to lightly grease the tins first to make it easy to remove). Make sure you’ve tightly pressed the crust into each tin – about 1/2 inch thick.
›› Bake for 15-20 minutes. You want your crust to be golden brown, but not burnt.
›› Remove and let cool.
›› Mix your Greek yogurt, honey, and vanilla before topping the mixture onto the cooled crusts.
›› Add any “extras” that you’d like!
